Stewed Tomatoes
Ingredients
- 2 cans diced tomatoes
- 1 red, orange, or yellow bell pepper cut into chunks
- 1 medium onion, peeled and cut into chunks
- 2 stalks celery, cut into pieces
- 3 cloves garlic, minced
- 1 T basil
- 1 T olive oil
Preparation
- Add olive oil, onion, bell peppers and celery to pan
- Cook on medium heat until onions are soft
- Add garlic and saute for 2 minutes
- Add tomatoes and heat through
- Add basil
