This recipe will show you how to make a scrumptious caesar salad.
Ingredients
1 head romaine lettuce
1 lemon
1 egg
1/2 cup grated parmesan cheese
1/3 cup olive oil
4 cloves garlic
1 tin anchovies in olive oil
~1/2 tsp freshly ground black pepper (to taste)
1 cup croutons (optional)
Preparation
Coddle the egg
Place the egg in a small pan.
Fill the pan with water to just above the height of the egg.
Place the pan on the stove in order to boil the water.
Heat the water until the water begins to boil then remove the pan from the heat.
Dump out the hot water and run the egg under cool water.
Break open the egg and scoop out the contents into a medium sized mixing bowl.
Prepare the anchovies
Open the tin of anchovies and drain the olive oil.
Place the anchovies in a small mixing bowl.
Using two forks, separate the anchoivies into pieces by placing the tines of one fork upside down on the anchovies. Use the tines of the other fork, also with the fork upside down, to shred the anchovies into small bits and pieces.
Mince the garlic and add the garlic to the mixing bowl.
Add the anchovies to the mixing bowl.
Squeeze the lemon into a small dish and make sure to remove the seeds. Add the lemon juice to the mixing bowl with the other ingredients.
Add the parmesan, the black pepper, and the olive oil to the mixing bowl.
Mix ingredients thoroughly with a fork or a whisk.
Prepare the lettuce.
Wash and dry the lettuce.
Tear out and discard the heart of the lettuce.
In a wooden bowl, tear the rest of the lettuce into pieces.
Add about 1/3 of the dressing to the wooden bowl. (The rest of the dressing can be frozen for later use. Divide the rest of the dressing into 2 parts and freeze seperately.)
Add croutons (optional).
Toss the lettuce, croutons, and the dressing together.
Divide into bowls and serve. Makes about 5-6 servings.
